2 ham steaks
2 tbsp honey
1 tbsp balsamic vinegar
1 tsp minced rosemary
1/4 tsp cumin
1/4 tsp chili flakes
Combine everything but the ham and mix well.
Rinse the ham in cold water and pat dry.
Grill the ham. During the last 2 minutes, brush on the glaze and then cook until ready.

olive oil
3/4 lb Italian cooked ham (parmacotto), diced 1/2"
sea salt and cracked pepper
1 carrot, peeled, diced
1/2 onion, minced
1 stalk celery, minced
3/4 cup dry red wine
1 cup canned tomatoes, mashed, with juice
1/2 tsp dry thyme
2 garlic cloves, crushed
1 1/4 lb ziti, uncooked
3/4 lb ricotta
8 oz. provolone, diced
parmesan
Heat 2 tbsp of olive oil in a dutch oven on high heat. Add the ham and brown for 5 minutes.
Add the carrot, onion, celery. Season with salt and pepper. Cook 10 minutes.
Add the wine and bring to a boil. Cook 5 minutes.
Add the tomatoes, thyme, and garlic. Bring to a boil then simmer on low, covered for 50 minutes. Check the seasoning.
Preheat the oven to 450 F.
Boil the ziti in salted water until quite firm. Combine 1/2 cup of the pasta cooking water with the ricotta and then drain the pasta. Mix the pasta into the ricotta.
Add the tomato sauce and the provolone. Stir to combine. Pour into a greased 13 by 9" baking pan. Sprinkle with parmesan. Bake 15 to 20 minutes.
Serve.

10 white asparagus spears, trimmed and scraped
2 tbsp butter
5 thin slices of ham
lemon juice
Saute the asparagus in butter until just tender.
Heat the ham in the butter and then wrap each piece around 2 asparagus spears.
Season with a squeeze of lemon juice.
Serve.

3 tbsp white vinegar
1 tsp salt
1/2 tsp black pepper
Place all ingredients in a jar or bottle with a lid.
Shake well before serving.
Serve with lettuce, cucumber, radishes, a little cubed cheddar cheese, and a little cubed ham.

1 head of lettuce washed and torn
1/2 lb cooked chicken (use leftover from making stock) shredded
1/2 cup diced baked ham
1 cucumber, sliced
1 hard boiled egg, quartered
1/3 cup white wine vinegar
1 tsp salt
1 scallion, minced
2 tbsp parsley, minced
1/4 tsp dry tarragon
1/2 tsp dijon
1 cup olive oil
Combine vingegar, salt, scallion, parsley, tarragon and mustard in a blender. Add 1/4 cup of oil and blend. Repeat until all the oil is used.
Place the lettuce in a large bowl and add the chicken, cucumber, ham.
