  • 2 cups uncooked macaroni
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/4 lb cheddar, grated
  • 1 cup swiss cheese, grated
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • paprika
    1. Boil the macaroni in salted water for about 6 minutes.  Drain.  Rinse with cold water, and then drain again,
    2. Preheat the oven to 350 F.
    3. Melt the butter in a saucepan.  Add the flour and stir.
    4. Whisk in the milk, and then stir until it thickens.  Add the cheeses and stir until they melt.
    5. Season with salt, and pepper.  Mix in the macaroni.
    6. Pour the macaroni into a 2 quart casserole dish.  Sprinkle with paprika.
    7. Bake uncovered for about 25 minutes.

  • 5 slices of bacon, diced
  • 3 scallions, minced
  • 1 bay leaf
  • 2 tsp paprika
  • 1/2 teaspoon cayenne pepper
  • 3 tbsp flour
  • 3 cups whole milk
  • 1/2 pound elbow macaroni
  • 2 cups extra-sharp cheddar cheese, shredded
  • Sea Salt and cracked pepper
    1. Preheat the oven to 350°.
    2. In a dutch oven, fry the bacon and cook over moderate heat until crisp, about 7 minutes. With a slotted spoon, transfer the bacon to a plate.
    3. Add the scallions and by leaf to the saucepan and cook over moderate heat, stirring occasionally, until the scallions are softened, about 5 minutes.
    4.  Add the paprika and cayenne and cook, stirring, until fragrant, about 3 minutes. Stir in the flour until blended.
    5. Gradually whisk in the milk until the sauce is smooth. Bring to a boil over high heat, whisking constantly, and cook until thickened. Reduce the heat to low and simmer the sauce gently for 30 minutes, whisking frequently. Discard the bay leaves.
    6. Meanwhile, bring a large pot of salted water to a boil. Add the macaroni and boil until pliable but undercooked, about 4 minutes. Drain the macaroni and return it to the pot.
    7. Stir the cheddar into the hot sauce, add the bacon and season with salt.
    8. Add the sauce to the macaroni and mix well. Spread the mac and cheese in the prepared baking dish. Bake for about 30 minutes, until golden brown and bubbling. Let stand for 10 minutes before serving.

    MAKE AHEAD The assembled mac and cheese can be refrigerated overnight. Bring to room temperature before baking.

  • 2 cups uncooked macaroni
  • 2-3 tbsp olive oil
  • 1/4 cup of flour
  • 1/2 onion, minced
  • 2 tbsp tamari
  • 2 tsp dijon
  • 1/2 tsp salt
  • 2 cups of milk
  • 1/4 lb cheddar cheese, grated
  • 1/4 lb monterey jack, grated
  • 3 oz. blue cheese, crumbled
  • panko
  • cracked pepper
    1. Cook the macaroni according to directions on package.
    2. Preheat the oven to 350 F.
    3. Lay the macaroni in a 9" by 13"  baking pan.
    4. Heat the oil in a medium saucepan.  Saute the onion until tender.
    5. Stir in the flour, tamari, mustard, and salt.  Whisk continuously.
    6. Add the milk, stirring constantly until it thickens.
    7. Stir in the cheese until it melts.
    8. Pour the sauce over the macaroni. 
    9. Sprinkle with panko.
    10. Grind some pepper over the panko.
    11. Bake for 15 to 20 minutes.
    12. Serve.

  • 3 large tomatoes, peeled, diced
  • olive oil
  • 1/2 onion, minced
  • 2 cloves garlic, minced
  • 4 tbsp fresh dill, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup cold water
  • 1/2 cup macaroni, cooked
  • 1 cup chicken stock
  • 1 tsp chicken bouillon
  • 1 cup milk
    1. Heat 2 tsp olive oil in a dutch oven.  Saute the onion until tender.
    2. Add the tomatoes, the garlic, dill, salt, pepper, and cold water.  Simmer, covered for 15 minutes.
    3. Stir in the stock with the chicken bouillon.
    4. Add the macaroni and the milk.
    5. Heat through without boiling.  Check the seasoning.
    6. Serve.
