  • 2 pckg active dry yeast
  • 1/2 tsp sugar
  • 3/4 cup luke warm water
  • 2 cups flour
  • 1 tsp olive oil
  • tomato sauce
  • dry thyme
  • dry basil
  • dry oregano
  • chili flakes
  • pepperoni, sliced
  • mushrooms, sliced
  • olives, sliced
  • mozzarella, sliced
    1. Combine the sugar and yeast in a 2 cup measuring cup.  Add the water and let rest 5 minutes.
    2. Place the flour in a large bowl and make a well.  Pour in the olive oil and the yeast liquid.
    3. Mix with a wooden spoon until it starts to come together.
    4. Knead on a lightly floured surface for 10 minutes.
    5. Place in a large greased bowl and cover with a slightly damped tea towel.  Place in a warm area and let rise 1 hour.
    6. Divide into 2.
    7. Preheat the oven to 450 F.
    8. Grease a baking pan and sprinkle the bottom lightly with cornmeal.  Stretch out half the dough to fit the pan.
    9. Spoon on the sauce and then sprinkle on the herbs and chili flakes.
    10. Top with the pepperoni, then the mushrooms, and the olives.  Top with the cheese.
    11. Place in the oven and bake for about 15 to 20 minutes.
    12. Serve.

  • 1 envelope (2 1/2 tsp) active dry yeast
  • 1 tsp sugar
  • 1 1/2 cups lukewarm water
  • flour
  • 1/4 tsp salt
  • 1 tsp olive oil
  • tomato sauce
  • dry thyme
  • dry basil
  • dry oregano
  • chili flakes
  • pepperoni, sliced
  • mushrooms, sliced
  • olives, sliced
  • mozzarella grated
    1. Dissolve the yeast and the sugar in the water and let stand until foamy 5 to 10 minutes.
    2. Combine 3 cups of flour and the salt in a large bowl.  Make a well and pour in the yeast liquid and add the olive oil.
    3. Mix with a wooden spoon to make a soft dough.
    4. Turn onto a lightly floured surface and knead until smooth and elastic, adding more flour if necessary, for 5 to 10 minutes.
    5. Divide the dough into 3 sections.  If you are going to be freezing some of the dough do so now.  It can be thawed over night and then allowed to rise before you use it.
    6. Place the dough you will be using in a large greased bowl and cover with a damp clean tea towel.
    7. Let rise in a warm place for 1 hour.
    8. Punch down the dough and knead 2 minutes.  Cover and let rise again for another 30 minutes.
    9. Preheat the oven to 500 F.
    10. Grease the pan you will be using and dust it with cornmeal lightly.
    11. Stretch out the dough to fit the pan.  Bake 7 to 9 minutes.
    12. Spread the tomato sauce on top and then sprinkle on the dried herbs and chili flakes.
    13. Lay the pepperoni down, followed by the mushrooms, then olives, and then the cheese.
    14. Return to the oven 7 to 9 minutes longer.
    15. Serve.

  • 1 loaf italian bread, cut to 1" slices, crust removed
  • 1 lb mozzarella, cut to 1/4" slices
  • 1 cup milk
  • flour
  • 1/4 cup butter
  • 1/4 cup olive oil
  • lemon juice
  • capers
    1. Skewer the bread, alternating with cheese slices, beginnging and ending with the bread.
    2. Dip the skewers into the milk until moist but not soggy.  Dredge in flour.
    3. Heat the butter and oil in a skillet and then fry, turning until golden.
    4. Keep warm in the oven until the rest are cooked, draining on paper towel.
    5. Squeeze with lemon juice and sprinkle with capers.  Serve.

  • 2 cups canned tomatoes, mashed
  • 1/2 onion, minced
  • 1 tbsp butter, melted
  • 1 tsp sea salt
  • cracked pepper
  • 1/2 tsp dry basil
  • 4 slices white bread, crusts removed, cubed
  • 2 eggs, beaten
  • 3/4 cup mozzarella, grated
    1. Preheat the oven to 375 F.
    2. Combine the tomatoes, onion, butter, salt, pepper to taste, basil, eggs and bread cubes. 
    3. Spoon into a greased 2 quart baking dish.  Sprinkle with the cheese.  Set the dish in a bain marie.
    4. Bake for 40 minutes.  Serve.

  • 3 cups cornflakes, crushed
  • 1 1/2 tsp garlic salt
  • 1/2 tsp dry oregano
  • 1/4 tsp cayenne
  • 1/4 cup flour
  • 2 egg whites
  • 2 tbsp water
  • 1/2 lb mozzarella cheese, cut into 12 rectangles
  • 2 jalapenos, minced
  • 2 shallots, minced
  • 3 plum tomatoes, diced
  • 1 tsp sea salt
  • 1/4 tsp cumin
  • 2 tbsp minced cilantro
    1. Combine the jalapenso, shallots, tomatoes, sea salt, 1/2 tsp garlic salt, cumin, and cilantro.  Marinate at least 2 hours.
    2. Preheat the oven to 400 F.  Line a baking sheet with aluminum foil.
    3. Combine the cornflakes, 1 tsp garlic salt, oregano, and cayenne.
    4. Beat the egg whites with the water.
    5. Dip the cheese sticks in the flour, then the egg, and then the cornflake mixture.  Re-dip them in the egg and then again in the cereal to double coat them. 
    6. Lay the cheese sticks on the aluminum foil.  Let stand for 10 minutes.
    7. Bake for 5 to 8 minutes or until the sticks are golden and the cheese is soft.
    8. Serve with the salsa.
