  • 1 tbsp butter
  • 3/4 cup chicken stock
  • salt
  • 1/3 cup couscous
  • 2 tbsp pine nuts
    1. Melt the butter in a saucepan.
    2. Add the chicken stock and bring to a boil.
    3. Stir in the couscous and season lightly.  Cover and turn off the heat and let stand 10 minutes.
    4. Stir in the pine nuts.  Serve.

  • 1/2 cup pine nuts
  • 3 garlic cloves, minced
  • salt
  • cracked pepper
  • 1 cup parmesan, grated
  • 1 cup cilantro, minced
  • 1/4 cup olive oil
  • 1/2 lb spaghetti, uncooked
    1. Preheat the oven to 350 F.  Spread the pine nuts on a baking sheet and bake for 5 minutes.
    2. Put the pine nuts in a food processor with the garlic, 1/4 tsp salt, and the remaining ingredients.
    3. Pulse until a paste forms. 
    4. Boil the spaghetti in salted water.  Drain.
    5. Toss with the pesto.  Serve.

  • 1/3 cup pine nuts
  • 1/4 cup vermicelli, broken into small pieces
  • 3 tbsp olive oil
  • 2 cups rice
  • 4 cups water
  • salt
    1. In a small skillet saute the pine nuts, and the vermicelli in the olive oil until golden.
    2. Wash the rice and then drain.  Place the rice in a large saucepan.  Add the water and season with salt.  Bring to a boil, reduce the heat and then simmer covered 10 minutes. 
    3. Add the noodles and pinenuts and return to a  simmer, covered another 10 minutes.
    4. Serve.

  • 1 bunch fresh spinach
  • 1 tsp peanut oil
  • 1 garlic clove, minced
  • 2 tbsp pine nuts
  • salt
  • dry sherry
    1. Heat the peanut oil in a large skillet. 
    2. Add the garlic and saute 30 seconds.  Add the pine nuts and saute 30 seconds.
    3. Toss in the spinach.
    4. Season with salt and sprinkle with sherry.
    5. Saute until just beginning to wilt.
    6. Serve.

  • 1 1/2 cups raw Arborio rice
  • 1 cup sliced mushrooms
  • 2/3 cup diced havarti cheese
  • 1/3 cup + 3 tbsp dry white wine
  • salt and pepper
  • 1/2 cup pine nuts
  • 3 tbsp olive oil
  • 1/4 cup minced onion
  • 1/3 cup milk
  • 2 tbsp grated parmesan
  • 3 cups boiling water
    1. Heat 1 tbsp olive oil in a dutch oven and lightly saute the mushrooms.  Remove from pot.
    2. Add 1 tbsp olive oil and saute onion.  Cook until tender. Pour in rice and cook 3 minutes.
    3. Let the havarti stand in the milk.
    4. Add 1/3 cup wine and stir until it is absorved. Add 2 1/2 to 3 cups boiling water 1/4 cup at a time, over the next 20 minutes.  Stir until absorbed after each addition. 
    5. Add the havarti and milk, 3 tbsp wine, and stir until absorved. Add the pine nuts, and the mushrooms.  Stir in parmesan.Season to taste.  Serve
