1 chipotle in adobo sauce, minced
1 cup chicken stock
1 habanero, seeded, minced
2 tomatoes, diched
3 garlic cloves, minced
1 shallot, minced
3/4 tsp cumin
sea salt cracked pepper
1/4 cup heavy cream
1 lb shelled, deveined shrimp
1 tbsp butter
the juice of half a lime
freshly made tortillas
In a saucepan combine the chicken stock, chipotle, habanero, tomatoes, garlic, shallot, and cumin. Bring to a boil, reduce the heat and simmer 15 minutes.
Season with salt and pepper. Stir in the heavy cream.
Simmer 5 minutes.
Meanwhile melt the butter in a skillet and add the shrimp. Season with salt and pepper.
Saute until pink and then squeeze in the lime juice.
Stir into the sauce.
Serve with freshly made tortillas to grab up the sauce.

1 lb fresh fettucine noodles
salt and cracked pepper
2 tbsp olive oil
2 tbsp butter
2 serrano chili peppers, minced
4 garlic cloves, minced
the juice of half a lemon
1/2 lb shrimp, shelled, deveined, butterflied
grated parmesan
4 oz. fresh arugula
Prepare fresh noodles or use store bought. Then boil in salted water until al dente. Drain.
Meanwhile heat the olive oil in a large skillet. Add the shrimp and saute 1 minute.
Add the garlic and chilis and saute 1 minute.
Stir in the butter until melted then add that arugula and lemon juice.
Toss with the pasta and sprinkle with parmesan. Check the seasoning. Serve.

1/4 cup butter
1 lb raw, shelled, deveined shrimp
1 head garlic, peeled, sliced
1 habanero, seeded, minced
1 cup chicken stock
1 tbsp dry sherry
the juice of 1 lime
sea salt
1/4 cup minced cilantro
1 ripe tomato, diced
1 baguette
Melt the butter in a dutch oven. Add the garlic and habanero and saute until fragrant.
Add the chicken stock, lime juice, dry sherry, cilantro and the tomato. Season with salt.
Bring to a boil and cook 5 minutes.
Add the shrimp and stir until pink.
Serve with a hot fresh baguette.

1 lb shrimp, shelled, deveined, cooked
1/4 cup whole grain mustard
1/4 cup prepared horseradish
2 scallions, minced
1/2 celery, stalk, minced
1 tsp sugar
1 tbsp paprika
1 tsp worcestershire sauce
1/2 tsp powdered garlic
2 tbsp olive oil
2 tbsp red wine vinegar
Combine in a food processor the mustard, horseradish, scallions, celery, sugar, praprika, worcestershire sauce, and garlic. Blend well.
With the motor running, add the oil in a steady stream and then mix well. Slowly add the vinegar and blend to mix.
