2 lbs potatos
butter
salt and cracked pepper
3 tbsp flour
2 cups of milk
1/4 cup of parmesan, grated
1/4 cup swiss cheese, grated
Parboil the potatoes in their peels for 10-15 minutes.
Pre-heat the oven to 375 F.
Peel the potatoes and thickly slice them. Lay the potatos in a baking dish.
Melt the butter in a medium saucepan. Stir in the flour and cook on low 2 minutes. Add the milk and whisk well to remove lumps.
Bring the sauce to a boil, reduce heat and let simmer on low for 5 minutes.
Stir in the cheeses until they are melted. Season to tasted with salt and cracked pepper.
Pour the sauce over the potatoes in the baking dish. Bake for about 20 minutes until the potatoes are tender.
