  • 1/2 cup cracked wheat (bulgur), soaked for 1/2 hour in cold water
  • 2 tomatoes, diced small with their juice
  • 2 scallions, minced
  • 2 bunches parsley, minced
  • 1 to 2 lemons
  • olive oil
  • salt and pepper
    1. Rinse the cracked wheat until the water runs clear and squeeze out the excess liquid.
    2. Place in a bowl with the tomatoes and their juices.
    3. Stir in the parsley and the scallions.
    4. Add about 1/4 cup olive oil or more to taste.
    5. Squeeze in the juice of 1 to 2 lemons, to taste.
    6. Season with salt and pepper.
