  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 large zucchini, diced small
  • 1/4 tsp marjoram
  • 1 tomato, diced
  • sea salt and cracked pepper
  • 1/4 tsp chicken bouillon
    1. Heat the olive oil in a saucepan.
    2. Saute the garlic until fragrant ad then add the zucchini.  Sprinkle on the marjoram.  Add the tomato and saute until tender.
    3. Season with salt, pepper, and chicken bouillon.  Puree.

    1. Preheat the oven to 450 F.
    2. Toss the zucchini in the olive oil and then season generously.
    3. Place cut side down in a baking dish and then roast for 15 to 20 minutes.
    4. Serve.

  • 1 tbsp fresh rosemary, minced, leaves only
  • sea salt and cracked pepper
  • the zest and juice of half a lemon
    1. Heat the olive oil in a skillet.
    2. Add the zucchini and the rosemary.  Season with salt and pepper.
    3. Saute until tender.  Stir in the lemon zest and juice.
    4. Serve.

  • 1/3 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp safflower oil
  • 2 egg yolks, beaten
  • 3/4 cup flat beer,
  • 1 lb zucchini, sliced thick
  • vegetable oil
  • mayonnaise
  • sambal oelek
    1. Combine the flour, salt, pepper, safflower oil, egg, and beer.  Chill for 3 hours.
    2. Combine 1/4 cup of mayonnaise with 1 tsp sambal oelek.  Chill.
    3. Heat around 2 cups of vegetable oil in a skillet to deep fry the zucchini.  Check the heat by adding a cube of bread and seeing how quickly it burns.
    4. Dip the zucchini in the batter and then deepfry just until golden.
    5. Drain the slices on a paper towel.
    6. Serve with the mayo sauce.

  • 2 zucchini, sliced in thick rounds
  • 1 egg
  • milk
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1/2 tsp cayenne
  • 2 tbsp parsley, minced
  • 1/2 tsp dry basil
  • olive oil
    1. Beat the egg with a little milk.
    2. Combine the crumbs, salt, cayenne, parsley and basil.
    3. Dip the zucchini in the egg and then in the crumbs.
    4. Heat some olive oil in a skillet and panfry the zucchini until golden on both sides. 
    5. Serve

  • 1 zucchini
  • salt
  • 3 tbsp feta, crumbled
  • 2 tbsp gruyere, grated
  • 2 tsp flour
  • 1 tbsp fresh dill, minced
  • 1 garlic clove, crushed
  • 1/2 tsp pepper
  • breadcrumbs
  • butter
    1. Cook the zucchini and boiling salted water for 10 minutes.  Drain and let cool.
    2. Preheat broiler.
    3. Slice the zucchini in half lengthwise and scoop out the seeds.
    4. Combine the feta, gruyere, flour, dill, garlic, and pepper.
    5. Arrange the zucchini in an oven dish, cut side up.  Season lightly with salt.
    6. Spoon the mixture into the trough of the zucchini.
    7. Sprinkle with breadcrumbs and dot with a small amount of butter.
    8. Broil until the cheese is hot.  Serve.

  • 3 tbsp olive oil
  • 3/4 cup minced onion
  • 3 garlic cloves, crushed
  • 1 cup raw Arborio rice
  • 1/2 cup dry white wine
  • salt and pepper
  • 3 1/4 cups water, kept at a low simmer
  • 1 zucchini, grated
  • 1/2 cup parmesan, grated
  • 1/4 cup mayo
  • 1 tsp sambal oelek chili sauce
    1. Make sauce: combine the mayo and the sambal oelek and chill.
    2. In a dutch oven heat 1 tbsp olive oil on medium-high.  Add the onion and saute until tender.  Add the garlic and the rice, and stir 2 minutes.
    3. Add the wine and stir until it is absorbed,
    4. Add water 1/4 cup at a time over 20 minutes until it has all been absorbed.  After 10 minutes of this stirring time has passed add the zucchini.
    5. Remove the risotto from the heat and stir in the parmesan.  Season to taste with salt and pepper.
    6. Chill 1/2 an hour or longer.
    7. Make into 4 cakes. 
    8. Pan fry in remaining 2 tbsp of oil on both sides.  Serve with sauce.
