Asparagus with Curry Butter

  • 3/4 lb asparagus, trimmed
  • 1/4 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp curry powder
  • 1 tsp lemon juice
  • 1/4 cup butter, softened
  • 1 scallion, minced
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  1. Combine all the ingredients except for the asparagus, form into a ball and wrap in waxed paper.
  2. Chill for 30 minutes.
  3. Steam the asparagus for 3 to 4 minutes
  4. Serve the asparagus with slices of the chilled butter.
