Cajun Roast Potatoes

  • 1 lb red potatoes, peeled, cut in 1/2" cubes
  • salt
  • paprika
  • chili powder
  • cajun seasoning
  • olive oil
  1. Boil the potatoes in salted water for 5 minutes.  Drain well.
  2. Lay the potatoes in a single layer on a baking sheet and drizzle with olive oil.
  3. Sprinkle with paprika, chili powder, and cajun seasoning.
  4. Season with salt.
  5. Roast in the oven for about 35 minutes.
