Drunken Greens

  • 3 slices bacon, diced
  • 1/2 onion, minced
  • 1/2 tsp salt
  • cracked pepper
  • 1/2 tsp cayenne
  • 4 garlic cloves, minced
  • 1 bottle dark beer
  • 2 bunches of turnip greens, cleaned well, stems removed, sliced in a chiffonade
  • 2 tbsp rice wine vinegar
  • 1 tsp molasses
  1. Saute the bacon until crisp in a large pot.  Add the onion and saute until tender.
  2. Stir in the salt, pepper, and cayenne.  Stir in the garlic and saute until fragrant.
  3. Add the beer, vinegar, and molasses.
  4. Stir in the turnip greens.
  5. Bring to a simmer. Cover and cook on very low for 1 hour.  Stir frequently, adding liquid if necessary.
  6. Check the seasoning.  Serve.
