  • olive oil
  • 1/2 onion, minced
  • 1 tbsp butter
  • 1/2 lb potatoes, diced 1/2 inch
  • salt
  • black pepper
  • cayenne
  1. Boil the potatoes in salted water for about 6 minutes.
  2. Drain well.
  3. Heat about 2 tbsp of olive oil in a dutch oven and saute the onion until tender. 
  4. Add the potatoes and season with salt, pepper, and cayenne.
  5. Saute until tender and slightly crispy.
