Roasted Beets with Horseradish Sauce

  • 8 small beets, rinsed, stems trimmed to 2"
  • 1/3 cup plain yogurt
  • 1 1/2 tbsp mayonnaise
  • 1 scallion, minced
  • 1 tsp horseradish
  • salt and pepper
  1. Preheat the oven to 350 F.
  2. Dry the beets and place them in a baking pan.  Cover them with foil and bake them for 2 hours.
  3. Combine the remaining ingredients and chill.
  4. Peel away the skins of the beets and serve hot with the sauce.
