- 8 small beets, rinsed, stems trimmed to 2"
- 1/3 cup plain yogurt
- 1 1/2 tbsp mayonnaise
- 1 scallion, minced
- 1 tsp horseradish
- salt and pepper
- Preheat the oven to 350 F.
- Dry the beets and place them in a baking pan. Cover them with foil and bake them for 2 hours.
- Combine the remaining ingredients and chill.
- Peel away the skins of the beets and serve hot with the sauce.
