- 2 lbs potatos
- butter
- salt and cracked pepper
- 3 tbsp flour
- 2 cups of milk
- 1/4 cup of parmesan, grated
- 1/4 cup swiss cheese, grated
- Parboil the potatoes in their peels for 10-15 minutes.
- Pre-heat the oven to 375 F.
- Peel the potatoes and thickly slice them. Lay the potatos in a baking dish.
- Melt the butter in a medium saucepan. Stir in the flour and cook on low 2 minutes. Add the milk and whisk well to remove lumps.
- Bring the sauce to a boil, reduce heat and let simmer on low for 5 minutes.
- Stir in the cheeses until they are melted. Season to tasted with salt and cracked pepper.
- Pour the sauce over the potatoes in the baking dish. Bake for about 20 minutes until the potatoes are tender.
- Serve.
