- 1 bunch fresh spinach
- 1 tsp peanut oil
- 1 garlic clove, minced
- 2 tbsp pine nuts
- salt
- dry sherry
- Heat the peanut oil in a large skillet.
- Add the garlic and saute 30 seconds. Add the pine nuts and saute 30 seconds.
- Toss in the spinach.
- Season with salt and sprinkle with sherry.
- Saute until just beginning to wilt.
- Serve.
