Vinegar Green Beans

  • 1/2 lb green beans, trimmed
  • 1/2 onion, peeled, left whole
  • 3 sprigs parsley
  • 5 garlic cloves, peeled, whole
  • olive oil
  • 2 tsp white vinegar
  • sea salt
  1. Combine the beans, onion, parsley, garlic, and 2 tbsp olive oil in a large pot with boiling water.  Simmer for 20 minutes.
  2. Drain.
  3. Discard the onion and garlic.
  4. Toss the garlic and beans with 1 tbsp olive oil.  Season with salt.  Sprinkle with vinegar.  Serve.
