Put a pie dish in the freezer for 20 minutes.  <\/span><\/font><\/font><\/p>\n

Put the cream and the vanilla in a saucepan and bring to a boiling point, but without letting it boil.<\/font><\/p>\n

Beat the eggs and the 3 tbsp sugar.  <\/span>While whisking, pour the cream over top of the yolks.<\/font><\/p>\n

Pour the mixture back into the saucepan.  <\/span>Cook on medium low heat until it thickens, about 10 miutes.<\/font><\/p>\n

When the cream is thick, remove the vanilla pod.  <\/span>Pour the cream into the chilled pie plate.<\/font><\/p>\n

Chill well.  <\/span>Sprinkle with the demerara sugar.  <\/span>Burn with a blow torch until blistered.<\/font><\/p>\n
