Lime Collins
- 1 heaping tsp turbinado sugar
- the juice of one lime
- 1 tbsp simple syrup
- 1 oz. gin
- club soda
- ice
- Pour the sugar in the bottom of one highball glass. Add the lime juice and the simple syrup.
- Pour in the gin. Fill glass with ice.
- Top up with club soda.
- Stir gently.
- Serve.
