Banana Bread
- 1 1/4 cups flour
- 1 tsp baking soda
- 2 eggs
- 1/4 tsp salt
- 1/2 cup canola oil
- 1 cup sugar
- 2 large, very ripe, mashed bananas
- Preheat the oven to 350 F.
- Grease a 9 by 5 inch loaf pan.
- Combine the flour, soda, and salt. Stir in the sugar, eggs, canola oil, and bananas until smooth.
- Spread into the pan.
- Bake about 55 minutes.
- Cool on a rack for 15 minutes.
