Banana Bread

  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 2 eggs
  • 1/4 tsp salt
  • 1/2 cup canola oil
  • 1 cup sugar
  • 2 large, very ripe, mashed bananas
  1. Preheat the oven to 350 F.
  2. Grease a 9 by 5 inch loaf pan.
  3. Combine the flour, soda, and salt.  Stir in the sugar, eggs, canola oil, and bananas until smooth.
  4. Spread into the pan.
  5. Bake about 55 minutes.
  6. Cool on a rack for 15 minutes.
