Apple Walnut Muffins
- 2 cups flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- cinnamon
- 1/4 cup canola oil
- 1 granny smith apple, peeled, grated
- 1 egg
- 1/2 cup milk
- 1/3 cup brown sugar
- 1/3 cup chopped walnuts
- Preheat the oven to 375 F.
- Line a muffin tray with cupcake liners and spray with cooking oil.
- Combine the flour, sugar, baking powder, salt, and 1/4 tsp cinnamon. Mix well.
- Stir in the canola oil, apple, egg, and milk, and blended.
- Spoon into the muffin cups.
- Combine the brown sugar, 1/4 tsp cinnamon, and the walnuts. Sprinkle on top.
- Bake 20 to 25 minutes.
Very tasty–nice and fluffy with a sugary nutty topping. yum
