Crumbly Apple Pie

  • 1 pie crust, chilled
  • 5 granny smith apples, peeled, cored, cut in 1" pieces
  • 1 1/4 cups icing sugar
  • brown sugar
  • cinnamon
  • a pinch of nutmeg
  • a pinch of allspice
  • 1/8 tsp salt
  • vanilla
  • 1 tbsp lemon juice
  • butter
  • flour
  • 1/2 cup oats
  • 1/2 cup walnuts
  • 3/4 tsp baking powder
  1. Line the oven with foil and preheat the oven to 375 F.
  2. Roll the pastry out to a 12 inch circle and line a pie plate with it.  Trim and crimp the edges.  Chill.
  3. Microwave the apple pieces for 5 minutes.
  4. Combine the icing sugar, 1/4 cup brown sugar, 3/4 tsp cinnamon, the nutmeg, allspice, salt, 1 tbsp vanilla, the lemon juice and then stir in 2 tbsp melted butter and 3 tbsp flour.  Mix with the apples and stir well.
  5. In a separate bowl combine 1/2 cup flour, 1/2 cup oats, the walnuts, 1/2 cup brown sugar, the baking powder, 1/2 tsp cinnamon, 1 tsp vanilla, and 4 tbsp softened butter.  Mix well.
  6. Pour the apple mixture into the pastry and then sprinkle the nut mixture on top.
  7. Tent with foil and place in the oven to bake 55 to 60 minutes.
  8. Serve with vanilla ice cream.
